General Cake Information
Cake Flavors
Our standard flavors are moist yellow cake or rich chocolate cake. Sheet cakes are available ½ yellow and ½ chocolate cake. Round layer cakes can be one layer of yellow cake and one layer of chocolate cake. Marble cake is also available. These flavors can be made the same day if ordered before noon, any day except Sunday. All of our custom cakes require a deposit. All major credit cards and personal checks are accepted.
Special order flavors include white cake,German chocolate cake, pink lemonade cake, creamsicle cake, almond, watermelon, strawberry, and carrot cake. These flavors usually require a one week notice to order or you can call for availability.
Fillings
All of our cakes (except single layer round cakes) are split and filled with the icing chosen for your cake at no additional cost. (We do not suggest putting whip cream filling in a buttercream cake as they do not blend well together.) For an additional charge the following fillings are available: cherry, blueberry, pineapple, fruitful strawberry, strawberry jelly, raspberry, bavarian custard, chocolate custard, and lemon pudding. These fillings are available any time. Ricotta cheese filling is available with a one day notice. When you order a fruit or custard filling in a whip cream cake, we always put a layer of cream on top of the filling.
Icings
Our standard icing is our light and creamy buttercream with just a hint of lemon flavor. Buttercream makes a great combination with all of our cake flavors and does not require refrigeration.
Also available is whip cream--fresh heavy cream lightly sweetened and flavored with a touch of vanilla. Our whip cream cakes MUST be kept refrigerated and consumed within a day or two for best results. When combined with strawberry filling, our whip cream cakes can’t be beat! For an exceptional taste try chocolate whip cream--fresh heavy cream combined with European fudge flavoring . . . Mmm Mmm Mmm!
Cream cheese icing can be ordered with a one day notice. We can add raisins, toasted coconut and walnuts for an awesome blend with fresh baked carrot cake.
Decorations
Standard decorations on all cakes include borders, writing, roses and rose buds, or balloons. A combination of roses and balloons are also available at no additional cost. We airbrush the sides of the cake with the specified color or colors or put a scallop around the bottom border. We use edible glitter for highlighting.
We can suggest a design for you from one of our many photo albums or you can design your own cake. Edible images are popular designs printed with food coloring on an edible base which blends into the icing after being applied to the cake. This is the best way to put a drawing on a whip cream cake. We have a large variety of drawings that can be airbrushed on. (We do not recommend this method on a whip cream cake because the colors will bleed out into the cream and blur the design.) You can also have us match a design from an invitation or napkin. We can quote you a price when we see the design.
Specialty Tortes
Orange Ambrosia--yellow cake filled with a thin layer of pineapple-orange, topped with a layer of pineapple-orange flavored fresh heavy cream. The cake is iced with regular whipped cream and borders of pineapple-orange are applied to the cake. As an option, it can be garnished with coconut on the sides. Slices of fresh oranges top off this outstanding creation. It can also be decorated with roses or balloons. Ambrosia cakes can also be made substituting cherries or strawberries in place of the pineapple-orange.
Chocolate Ambrosia--chocolate cake layered with European chocolate fudge, topped with heavenly chocolate whip cream. You can also have it iced all around with chocolate heavy cream and as an option, garnished with sweet coconut. This outstanding confection can be decorated or garnished with slivers of semi-sweet chocolate.
Black Forest Torte--chocolate cake washed with kirchwasser (cherry brandy), filled with whole cherry filling folded into fresh heavy cream, iced with whip cream, garnished with marachino cherries and slivered semi-sweet chocolate.
German Chocolate Cake*--moist German chocolate cake filled and topped with caramel cream, mixed with pecans and coconut, and iced with chocolate icing.
Carrot Cake*--made with fresh ground carrots and spices, iced with cream cheese icing, plain or with toasted coconut, raisins and walnuts.

CUT-OUT CAKES
All of our shaped cakes are hand sculpted from a 1/2 sheet cake. Most will serve 30-35 people. All cut-out cakes will require a deposit when ordering and require one to two days lead time. We can cut-out almost any design. Please keep in mind that designs such as a horse with skinny legs will not result in very many servings when made into a cut-out cake. In this case we do suggest that you have a drawing put on a sheet cake which will give you the same effect but result in more servings.
